PRIMI Pasta & Wine Bar

PRIMI Pasta & Wine Bar is a local chef and sommelier’s love letter to Italy, inspired by the owners’ 2010 bike tour through the country. You’ll find it at the north end of Main Avenue. It’s a relaxed neighbourhood spot that suits a quick bite just as well as a long, lazy lunch.

The pasta is made by hand every day and paired with classic sauces. Think Bolognese, carbonara, pesto Genovese and a truffle-rich Tartufo, plus daily specials and panini. Much of the produce and meat comes from farms around southwest Colorado. Save room for the house-made gelato.

PRIMI calls itself “elevated fast-casual”: you order and pay at the counter, and your food is brought to your table. That keeps prices friendly without cutting corners on quality. There’s indoor and outdoor seating, it welcomes families, and the bar pours Italian wines by the glass, craft cocktails and beer on draught.

Don’t miss Aperitivo, their Italian happy hour, from 3 to 5pm. It’s the perfect way to settle in after a day exploring. Walk-ins are welcome, and if you’d like to book a table for dinner, give them a call earlier in the day.
